Cabernet Sauvignon

California is, after Bordeaux, the world’s largest grower of Cabernet Sauvignon, most notably in the Napa Valley and warmer AVAs of Sonoma County. In California the area of Cabernet Sauvignon planting doubled in the 1990s, precipitously lowering prices and disrupting the health of the wine industry. As in Bordeaux, it is often blended with Merlot and Cabernet Franc to produce world-class wines. More commercial versions may be blended with Ruby Cabernet or other varietals that provide more structure and richness than Cabernet Sauvignon can provide. The grape has also found a home in Washington, though it requires the warmest vineyards such at the Red Mountain AVA in the lower Yakima Valley for it to ripen fully.

Our single-vineyard Vine Hill Ranch Cabernet Sauvignon is produced from several special blocks of grapes grown in the acclaimed Vine Hill Ranch along Oakville’s gently sloping western benchlands. We have been purchasing these grapes from Vine Hill Ranch owner Bob Phillips since 1981, and they consistently yield exceptionally intense, concentrated and complex Cabernet Sauvignons that annually rank among Napa Valley’s finest.
We utilize traditional artisan winemaking techniques with the Vine Hill Ranch fruit to ensure the maximum extraction of color, flavor and tannin. After crushing the grapes, the juice is cold-soaked for 48 hours before fermentation is initiated with a cultured yeast strain. In 2004, we used a single French strain that enhances mid-palate texture, depth and intensity. After fermentation completed, and the wine enjoyed an extended maceration on the skins to further extract color and flavor while softening tannins, we gently drained the free run wine from the skins and aged it in French oak barrels for 22 months, 63% new, before bottling in August 2006.

Our 2005 Benchland Select Cabernet Sauvignon was produced from three prime vineyard sites located along the gently sloping western benchlands of Napa Valley’s Oakville appellation. These sites enjoy ideal eastern exposures, mild afternoon temperatures and well-drained soils, ensuring their fruit ripens slowly and evenly throughout the growing season. We hand-harvest, ferment and age each block separately to capture its unique qualities, then blend the lots to create a Napa Valley Cabernet Sauvignon of exceptional fragrance, depth and character.

To craft our Benchland Select Cabernet Sauvignon, Cakebread Cellars winemaker Julianne Laks ferments the fruit from each vineyard site separately, employing the tank sizes, yeast strains, fermentation temperatures and maceration techniques best suited to each lot, which vary not only by location and ripeness level, but also by clonal type. These specialized fermentations and the lot-specific barrel aging regimens Julianne employs ensure that the finest attributes of each vineyard site are reflected in the final blend. The 2005 vintage marked the first year that we had master viticulturalist, David Abreu, manage the Herb Lamb vineyard from beginning to end. Through skillful pruning and careful management of the vines and their fruit, we were able to produce the best quality grapes to date from this special vineyard. In order to achieve this, we thinned the fruit to record low levels, thus making for the tiniest release ever for this wine.

"From day one, the 2005 Herb Lamb Vineyard Cabernet has been an incredibly fragrant wine in the making. With a beautiful ruby pitch, the wine shows an amazing concentration of flavors. Earthy notes of truffle and forest floor intermingle with brooding aromas of black fruits, resin, chocolate mint and smoked meats, making for a very seductive Herb Lamb Cabernet. The wine is at once supple and rich, revealing great breadth across the palate. The softened texture of the tannin make this vintage of Herb Lamb Cabernet remarkably delicious at release, but this wine will undoubtedly improve with a minimum of 5 years of age, and last 20-25 years.

Tychson Hill Vineyard

The development of the fruit on the Tychson Hill Cabernet vines in 2005 was picture perfect. In order to concentrate the flavor and color of the grapes, we removed fruit from the vines on 3 different occasions in this vintage. The fruit was picked in the middle of October and arrived at our doorsteps with perfectly plump, fresh berries, and very little sorting was needed as we destemmed the fruit into the stainless steel tanks. After 41 days of maceration, the wine was gently drained from the skins and put into new French oak barrels, where it underwent malolactic fermentation and barrel aged for a total of 20 months before bottling in June 2007.

"My first impression of this wine at the time of release is how surprisingly demure it is at first. I know how much power is at the core of the wine, and so I find it fantastically seductive the way it pulls you in to explore its depths. At first it exhibits dark undertones of smoked cayenne, musk, and ripe plums, yet as it is exposed to air in the glass it slowly unfolds and expresses compelling organic aromas of peat, nutmeg, and savory grilled steak juices. It is with great pleasure that we release our 2005 Estate Cabernet Sauvignon. We had a wonderful long, moderate, cool summer in 2005 -- perfect for our Oakville hillside fruit. Our Cabernet reveals the unique character of the vineyard location and exposure to the late afternoon sun.

Our 2005 Showket Vineyard Cabernet Sauvignon might be the most complex wine we have ever released. The vintage gave us perfectly ripe Cabernet Sauvignon and Cabernet Franc, so we increased the percentage of the Cabernet Franc to 15% and it shows in the finished wine. In addition to our hallmark black berry and cassis aromatics this vintage shows hints of violets, tobacco and cedar from the additional Cabernet Franc. On the palate it is very round and seductive. It starts with a lively grip and gains size and depth as it opens up. It will be a perfect compliment to hearty dishes, but can also stand on its own. The 2005 Showket Vineyard Cabernet Sauvignon is truly an exceptional wine.

The 2004 vintage of Schweiger Cabernet Sauvignon marks a new progression in our Cabernet program. With Fred’s blessing, Andy has begun carefully experimenting with blending small amounts of our classic Merlot into our Cabernet Sauvignon to further express the beautiful fruit of our Spring Mountain Estate. Those familiar with our wines know our prior 2001 Cabernet release began a brave new world for us, as we extended our barrel aging program to further soften and round out our full mountain fruit. No one believes me… when I say that we share these grapes with the bears, mountain lions, turkeys and deer in this remote vineyard… that is until they accompany me to the vineyard! These grapes grow on the slopes of a very famous vineyard above 1,400 feet elevation, in a very remote area of the Howell Mountain appellation in Napa Valley. Of all the places where grapes are grown, this is truly a Grand Cru vineyard and appellation. The vineyard itself is cut from the mountain and grows on terraces so steep that walking down the rows is dangerous!

This single vineyard Cabernet Sauvignon is crushed and fermented with extended skin contact and maceration for 21 days. It is then pressed and put into small, French oak barrels for 24 months before bottling.

The 2003 growing season in the Napa Valley was one of the strangest in history. With adequate rainfall from the winter months, budbreak took place in late March and early April. Mother Nature played some tricks on the vineyard by delivering over 5 inches of rain in late April and was not about to let us have another early harvest like there was in 2002. The rains slowed down all progression of the vines until the end of May with bloom taking place in late June. A warm summer with temperatures hovering in the high 80's followed. In September, a series of heat waves with temperatures above 105 degrees caused widespread sunburn and dehydration. The affected fruit, as much as 33% in some areas, had to be dropped. Picking began in 2003 with the Cabernet Sauvignon on October 6th and finished on October 17th. Cabernet Franc was harvest on October 15th and Petit Verdot on October 29th. The extended hang time insured that the fruit was as ripe as possible with mature tannins.

This wine is definitely a sum of its parts. Each of the vineyards brings a unique characteristic to the blend. In the front palate and the nose, it is all Dry Creek Cabernet: bright fruit, hints of mineral, and supple tannins. The mid palate is where the Alexander Valley fruit shows its stuff: signature chalky, dusty tannins, lush mouth feel and ripe red fruit. The amazing intensity of the fruit is discernable from start to finish. The finely grained tannins not only complement the structure of the other vineyards, but give the wine its back bone that will allow it to age gracefully for the next 7-10 years. The complexity that the 2005 vintage exhibited meant that we did not need to blend any other varietals into this wine, this is 100% Cabernet.
