Bordeaux

Red Bordeaux, which is traditionally known as claret in the United Kingdom, is generally made from a blend of grapes. Permitted grapes are Cabernet Sauvignon, Cabernet Franc, Merlot, Petit Verdot, Malbec, and Carmenere. Today Malbec is very seldom used, and Carmenere is used in tiny quantities. An example of a famous château that uses Carmenere is Château Clerc Milon, a fifth growth Bordeaux.

White Bordeaux, including the sweet Sauternes, is made from Sauvignon Blanc, Semillon, and Muscadelle.

2006 Sonoma Valley Red Wine "les Vestiges"

A Right Bank Bordeaux blend of 50% Merlot, 21% Cabernet Sauvignon, 16% Cabernet Franc, and 13% Petit Verdot from a vineyard we designed, planted, established, and farmed over several years at the northern tip of the Sonoma Valley. The young vineyard has given a wine with a relatively robust 14% alcohol, while the pH (3.79) and acidity (.60 g/100mL) provide a crisp counterbalance and, together with the powder-fine tannins, contribute to the seamless and sophisticated mouthfeel. Clean, pure, and serious, the wine is rounded out by 50% tight-grain new French Oak from a selection of coopers and barrel aged for 17 months. Aromatically, black tea, sage, citrus blossom, confiture cerises, brioche, honeysuckle, and allspice are evident. On the palate, an expansive entry evolves to a round and balanced texture with flavors on the border between the red and black fruit spectrums exhibiting black cherry, red currants, and plum notes. The finish is creamy and clean at the same time, with the mid palate flavors persisting and becoming more intertwined with the light vanilla and pain grillé notes, all lingering for a long, fine, finish.

We call this wine ODYSSEY because each vintage takes us on a journey to blend the finest fruit from our Odyssey Vineyard located 1,350 feet above the valley floor.

The 2003 is comprised of 45% Cabernet Sauvignon, 25% Cabernet Franc, 29% Merlot, and 1% Syrah. It is blended to express the essence of our vineyards on Atlas Peak. The texture is rich, giving a wonderful “mouth feel.” While not one of the varietals dominates the flavor, one still has the impression of Napa Valley Cabernet. There are “layers” of flavors, with black cherry predominating while nuances of white pepper, chocolate and cinnamon are present. This is a great example of the winemaker’s “art” of blending varietals to make the sum add up to more than the “parts.” While very approachable now, we believe this wine will easily age for 8 to 10 years with its tannin structure.
